Yellow isn’t just yellow
Here is a color scale used to measure the yellow color of margarine. In 1888, it became illegal to color margarine more yellow than number 9 on the scale. It was important to ensure that butter and margarine couldn’t be confused, so the Danish government wanted to control the coloring of margarine.
The poster is size A1.
Exhibition about Margarine
The exhibition Margarine illustrates how the choices we make about our diet, our understanding of how blood vessels function, and the statistics of human health have been intertwined in Danish and international history.
